Being in college comes with a lot of challenges, many of which are financial. I remember moving into my first apartment a year ago and having a real fear that I wasn’t going to be able to afford to eat. I woefully looked at my collection of instant ramen noodles and felt a little hopeless. I should say, I’m not a big fan of instant ramen, and I’m not a fan of only eating rice and black beans for sustenance. I was full of dread.
My boyfriend had to deal with my dramatic breakdown (bless him) and gave me the wake-up call I needed: if I was going to literally survive college, I was going to need to get better at feeding myself and meal planning.
The problem was, I was utterly lost. I didn’t even know where to start. I poured over massive recipe sites with no direction and felt myself getting overwhelmed. That’s when he sent me a link to the site that would honestly change my life.
Budget Bytes is run by Beth Moncel, who has honestly done the Internet a service by posting amazing recipes to fit a variety of lifestyles and dietary needs. Not only are there amazing recipes, there are posts with tips on being healthier, sustainable, and most importantly budget friendly.
She has tips on freezing foods so they don’t go bad before you use them, or how to buy produce so you’re staying healthy without feeling like you’re throwing out your food, or how to go vegetarian for a month with tons of recipes.
Something really unique about Budget Bytes is Beth not only tells you how much a dish will cost to make but how much it’ll cost per serving and even down to how much each ingredient will cost. If a recipe calls for 2 cloves of garlic, she will tell you how much that’ll cost (it’s 16¢ if you were wondering). For example, here’s her Spaghetti Carbonara recipe, which I’ve made before and is delicious.
She teaches you how to cook, her recipes truly feel like she’s hanging out with you in her kitchen and guiding you through it.
